Job Description/Responsibilities:
- organization and control of the technological process of fish smoking;
- selection of smoking parameters and their adjustment according to the product;
- monitoring the production process and making technological decisions;
- ensuring the quality, taste, color, texture and yield of products;
- improvement of new and existing smoked product technologies;
- maintenance and updating of technological cards, recipes and processes;
- assessment of the impact of raw materials and production parameters on the final product;
- cooperation with heads of production, quality and other departments;
- analysis of discrepancies and decision-making;
- consulting employees and ensuring technological requirements;
- participation in the implementation of new products and optimizing production processes.
Requirements for the candidate:
- you have practical work experience in fish smoking technology;
- you are well versed in hot and/or cold smoking processes;
- you understand how different smoking, temperature, humidity, time, salting and raw material parameters affect the final product;
- you are able to make technological decisions independently;
- you are focused on results, quality and production efficiency;
- you have a sense of responsibility and are able to work in a production environment;
- education in food technology would be an advantage.
